The ingredients for Red Beans are:

1 piece of bacon, raw
3 Beef Hot Links (such as Hillshire Farms), sliced in 1 inch pieces.
1 small ham hock
1 cup diced onion
2-3 celery stalks diced
1 green bell pepper diced
3 cloves garlic, diced.
1 lb. bag of dried small red beans, soaked for at least 8 hours, rinsed and drained.
1 light beer, any type
2 tsp Old Bay seasoning
Fresh ground pepper and salt to taste
Tobasco to taste
Approximately 4 cups of water.


How Do I Make Red Beans?

Here is how you make Red Beans:

Dice bacon and saute in a large stock pot. Once bacon begins to crisp and fat begins to render, add the sliced hot link. Cook to brown and render fat. Add the diced vegetables, except the garlic and cook until tender. Add the garlic and cook for 1 minute. Add the red beans, beer and water to cover. Stir in the Old Bay, tobasco and pepper. Cook on low for 6-8 hours. At this point, I usually transfer to a crock pot and cook on low all day. About an hour before serving, taste and add salt to taste if needed. Serve in bowls over rice.
