Lightly spritz pan with oil. Saute eggplant, onion, and garlic until soft and brown. Add in remaining ingredients and stir well. Bring to a boil, then reduce heat and cover. Simmer for 5-8 minutes, stirring occasionally, until eggplant is extremely soft and sauce has thickened. Using a potato masher or immersion blender, mash/puree eggplant mixture until it resembles refried beans in texture.
