1--14 1/2 oz. Can Diced Tomatoes
2 tbsp. Dried Onions
1/2 tsp. Italian Seasoning
1 Bay leaf
1/2 tsp. Celery seed
1 tsp. Dried parsley
1/2 tsp. Black Pepper
1/2 tsp. Salt
1/2 c. diced ham
1/2 c. diced peperoni
2--15 oz. Cans Cannellini beans, drained
1/2 c. diced carrots


How Do I Make Italian Beans and Greens?

Here is how you make Italian Beans and Greens:

In a large 8 to 10 quart stock pot, pour in the chicken broth, diced tomatoes and all the seasonings. Stir. Add the ham bone, diced ham and pepperoni. Bring to a boil, lower heat. Add the drained and rinsed beans and the carrots. Wash and chop the escarole and add to the pot, stirring well. Cover and bring to a boil, then reduce heat to a simmer. Simmer for 1 hour. Remove the ham bone and pull off any pieces of ham that were left on the bone and add to soup. Discard bone. Serve hot with Italian bread or rolls.
