Chop vegetables and saute in olive oil for 5-10 minutes. Add pork, cook until sealed. Remove pork from pan, slice into small pieces, return to pan. Add chipotle peppers, tinned tomato (do not drain) tomato paste, black pepper and water. Bring to a simmer and let cook on a slow heat until pork is tender (approx. 1 hour.)
