1 lb red kidney beans
2 lb smoked ham hocks(optional because of fat content, but it does really make a lot of difference in taste)
1 lb hillshire farm hot smoked sausage spicy chipoltle
( of course you can use your favorite)
1.5 cup chopped onion
.5 cup chopped celery
.5 cup chopped bellpepper
1 tlbs minced garlic
water
salt & pepper to taste-----(don't add much to start with because your hocks and sausage have salt too.Better to salt & pepper mostly at the end of cooking)

Here is how you make Red Beans With Spicy Chipoltle Smoked Sausage:

1. Put beans in dutch oven or crock pot (I do mine in crock pot so as not to worry about sticking.)2. Rinse beans and discard any rockes or bad beans3. Add water to cover beans by at least 2 in..4. Add veg. and a pinch or two of salt and pepper5. Add ham hockes & stir.Cover put crock pot on high for 3 hrs. ,stirring once each hr.Add little water at a time if needed.6. Remove ham hockes, let cool. Pull the little bit of meat off and add back to pot. Discard the rest of the hocks. They are really just for flavor.7. When beans start to get soft ,use a wire whisk and stir vigorously to break up some of the beans. This will give you a creamy gravy instead of watery.8. At this time add your sausage that has been cut up the way you like .(Portion control is easy if you cut into 10 pieces. One for each person.)9 . Cook until beans are very soft, about 1 or 2 hrs., it depends on the beans themselves.10. If too watery take off lid for last hr. and let water reduce until you are happy with product.11.
