Makes 16 1 cup servings. Rinse and sort beans according to package instructions. Don't precook the beans.In a 7.5 qt. crockpot (which actually hold 16 c.), add all ingredients with enough water to come to within 1/2 to 3/4" of top of crockpot. Stir, cover, and cook overnight on low. In morning, discard any fat on top. Remove bay leaves.If you prefer a thicker soup, mash some of the beans up until desired consistency of soup is achieved.Stir and adjust water and seasonings. Serve hot with cornbread muffins for a down-home meal.NOTE: Baking soda removes the "toot" from beans. If necessary, start with 1/4 t. If needed, add up to 1/4 t. more (a total of 1/2 t.); more will cause it to taste soapy.NOTE: Extras freeze well.
