1 c. diced carrots
1 bell pepper, diced
2 c. corn

1 can diced tomatoes (or use fresh)
1 Tbs balsamic vinegar
1 Tbs low-sodium soy sauce
2 Tbs fresh lime juice
1 Tbs chili powder (or to taste)

Here is how you make Black Beans and Veggies:

Heat oil in small skillet. Add onion, celery, and carrots, and cook until just tender. In large bowl, combine bell pepper, corn, zucchini, tomatoes, spices, vinegar, soy sauce, lime juice, and cooked onion mixture. Add in cooked black beans. Bake in a casserole about 20 minutes at 350 (or cook in a large pot over medium-low heat until cooked through). Adjust seasonings and add cilantro.Serve over rice or with tortillas.
