Preheat oven to 350 degrees.Chop 1 medium green pepper. Shred 1 medium sized carrot. Chop 1/4 cup onion. Brown ground beef, drain. Add in vegetables and BBQ sauce. Continue cooking about 5 minutes or until peppers and carrots are cooked. Stir and remove from heat. Using cupcake pan, press biscuits into holes and flatten to bottom and sides. Spray with cooking spray to avoid sticking. Spoon meat mixture into muffin cups. Press down with spoon to fill. Use entire mixture. Bake for 10 minutes at 350 degrees. Remove from oven. Sprinkle cheese on top of each muffin cup. Bake another 3-4 or until cheese is melted. Enjoy!
