3 1/2 lb. corned beef brisket
5 medium size potatoes
5 carrots, cleaned and cut in half
2 lbs. green cabbage, quartered

Here is how you make Pressure Cooker Corned Beef with Cabbage and Carrots:

Pour water into the pressure cooker. Add bay leaves and brisket along with the seasoning packet. Lock lid and bring up to pressure using high heat. Turn heat down and begin timing for 60 min. Remove from heat and allow pressure to drop naturally.Remove lid. Check for doneness of meat. It should shred easily, if not cook again with the cabbage and carrots.Place the carrots and quartered cabbage into cooker. Bring up to pressure, reduce heat and cook for 3 minutes longer. Quick-release the pressure.Remove vegetables from pot and place on a platter. Slice the meat and arrange on the platter for serving.Serve with your choice of mustard or horseradish sauce.
