This is so tasty. I use leftover roast and the turmeric and fenugreek really give it a lot of depth. My family loves it and I love that each serving has over 11 grams of fiber. Season with salt, pepper, turmeric, Cajun spice and marjoram. 20 seconds before deglazing with wine, create a bare spot in the pan and sprinkle in the fenugreek. You will smell Carmel almost immediately, deglaze with wine as soon as you smell the carmel (it will become bitter if you don't). Add in canned tomatoes with juice and break up with a wooden spoon and continue to scrape up brown bits from bottom of pan (flavor!). Add in drained white beans and rinsed lentils and mung beans. Let bubble for 10 minutes. Add in stock and bring to boil then reduce to simmer for 20 minutes. Turn off heat and let sit for 5 to 10 minutes. Serve with bread.
