Make rice as directed.Spray large skillet with non-stick cooking spray.While rice is cooking, mix all other ingredents into skillet, cover and cook on med-high heat for 8 to 10 minutes until vegetables are cooked to desired doneness and most of the sauce is evaporated. If you like your vegetables "crispier" you may want to reduce the amount of liquid you put in skillet. This dish is also good with chicken for fewer calories. You can use any kind of fresh vegetables you like or ones that are in season. Zucchini works well in this, just don't add it until everything else is almost done as it cooks quickly.
