5 large sweet peppers
2 tsp canola oil
2 medium stalks celery
1 medium onion
1 medium carrot
1 clove garlic
1 lb extra lean ground beef
2 tsp dried thyme
2 tsp paprika
pepper, to taste
1 1/2 cup tomato sauce (plain, not spaghetti sauce)
1/2 cup quinoa (uncooked)

Here is how you make Beef and Quinoa Stuffed Peppers:

Cut the tops off peppers and remove seeds. Cut the stalks out of the pepper tops. Finely dice celery, onion, carrot and pepper tops. Heat oil in a large frying pan over medium heat; add vegetables and saute until starting to soften. Chop or crush garlic, add to pan and cook a minute more. Add ground beef and cook, breaking up the beef with a spoon or spatula. When the meat is cooked, stir in the thyme, paprika, pepper, tomato sauce and prepared quinoa*.Spoon beef and quinoa mixture into peppers and sprinkle with parmesan. Place in greased pan and bake at 375 degrees for about 40 minutes or until the peppers are soft and starting to turn golden on the bottom.*To prepare quinoa: Rince quinoa. Put quinoa and 1 cup water in a pot and bring to a boil over high heat.
