Half the 2 medium acorn squash and remove the seeds. Use a large baking dish, add 1/2 inch of water and place the 4 halves open side down. Bake in a 375 degree oven for 20 minutes, remove and let cool.Dice onion, bok choy, celery, and bell pepper to a medium dice.Add the butter and olive oil to a large cast Dutch oven on medium high until the butter has melted, then add the diced vegetables and cook about 3 minutes or until they are opaque.Add the salt, pepper, and other seasonings and mix well.Remove the vegetables and add the ground beef, chopping well as it is browned. Once it has browned, add the vegetables back to the ground beef, stirring often.Using a small melon baller, cut balls of the acorn squash from the acorn halves and fold into the meat mixture, using care to keep the squash as complete as possible.
