2 lbs stew meat, 1.5 in chunks, seasoned with tenderizer and Natures Seasoning
1 large onion, sliced and quartered
1 large bell pepper (green) chopped
1 lb thick carrots, chopped into 1/2 in rounds
8 oz mushrooms, halved and/or quartered (depending on size)
1 can beef broth
1 can regular stewed tomatoes
1 pkg McCormicks beef stew mix


How Do I Make Beverly's Beef and Vegetable Gravy?

Here is how you make Beverly's Beef and Vegetable Gravy:

Cook in a heavy dutch oven, iron is best. You want the fond.Chop beef, put into 2 bowls, season with tenderizer and Nature's Seasoning.Heat 1 tbs oil (I use corn oil) over med high heat. Put 1/3 beef in pot, do not stir. Leave it alone while you go back to prepping veggies. After several minutes, stir and turn over pieces, browning well. Remove, add next third, repeat.Meanwhile, prep onions, carrots, bell pepper, mushrooms, putting each in separate bowl.After meat is well browned, reduce heat to medium low. wait until all water from meat is cooked off before adding 1 tbs oil. After it heats, add onions. Stir occasionally, bringing up all the fond. After about 2 minutes, add carrots and bell pepper. Stir and cook another 5 minutes until peppers start to wilt. Add beef broth then stew mix. Stir well, then add tomatoes. Mix well, bring to boil.Add mushrooms, turning them to get well coated with liquid. Then add beef.
