Here is how you make Light Vegetarian Beef Stroganoff:

Boil water for the egg noodles and cook according to package instructions. Cook the onions in butter until they start to get soft. Add garlic and mushrooms and cook until they start to sizzle. Add "meat" and cook until heated. Season with salt, pepper, and paprika to taste (amounts are approximate!). There should be enough paprika to make the sauce a nice brown color when the soup is added. Add the can of soup and about 3/4 of a can of water. Stir until well mixed and add more seasoning if necessary. Cover and wait until noodles are done boiling. Drain noodles. Uncover beef mixture and add sour cream.
