Brown, and drain fat, if any.Add spices, and chopped vegetables. Mix and simmer in pan until celery and zucchini are soft. Turn off heat.Open can of tomato sauce, pour just enough of sauce to lightly cover the bottom of your baking dish. Take one uncooked cannelloni noodle and push into ground beef mixture, turning your hand slightly as you push. The ground beef will stay inside the noodle. Repeat until noodle is full. Fill all the noodles, lining them in the baking dish as you go. Once all the noodles are placed full in the baking dish, you will likely have a little bit of the ground beef mixture left over. Turn the element to a medium heat, and add the rest of the tomato sauce to the remaining mixture in the large pan. Add 1/2 cup red wine and can of tomato paste, stirring slowly and carefully.
