Here is how you make Quick Shrimp Curry with Broccoli and Carrots:

Heat the pan with a little coconut oil.Toss in the pre-chopped broccoli. I cut the baby carrots in half but you can leave them whole. Regular chopped carrots works too. Babies were just fast and it's what I had. I also threw in most of the grated ginger. You can add less if you like.After a minute or two I added 1 cup of water and the curry sauce and let that cook and simmer down a bit.After about five minutes I added the shrimp and the rest of the ginger. I also tossed in a little Sriracha, optional of course.
