1 lb Ground Chicken
1.5 cups Basmati Rice

1 tbsp Curry Powder
0.5 tsp Kosher Salt
1 tsp Black Pepper
1 tsp Old Bay
1 tsp Tarragon
1 tsp Marjoram
1 tsp Turmeric
3 cups Tomato Juice

How Do I Make Mum's Cabbage Rolls?

Here is how you make Mum's Cabbage Rolls:

Cut out the core from the bottom of the cabbage and place entire head in a large pot with enough water to cover it. Boil with a lid on for about 30-40 minutes to allow cabbage leaves to become pliable for rolling. After 40 minutes dump into a collander to cool.Put the Tomato Juice aside for last step before putting in the oven!While cabbage is boiling, dice the onion, crush or finely dice garlic, and mix all other ingredients, including the raw ground chicken, and raw rice. DO NOT add the Tomato Juice!When cabbage is cool enough to handle, peel off the first two or three leaves and place in bottom of cooking vessel. Recommend using a dutch oven or deep rectangular caserole dish (or roast pan). Pour a quarter cup of the tomato juice on the layer of leaves.Peel off cabbage leaves one at a time and cut a triangular wedge out of the thick part of the leaf spine to make it easier to roll. Take approximately two ice cream scoops of meat mixture and combine together and place on the fat green side of the leaf and roll, tucking in the sides as you go like you would a burrito.Place in cooking vessel seam side down. Repeat until all mixture is gone. Pour the remaining Tomato Juice over the rolls in the cooking vessel and cover with remaining cabbage leaves.Cover vessel with lid or tin foil and bake in oven for approximately 1 hour.Serving Size: Makes about 12 rolls; 2 per serving.Number of Servings: 6Recipe submitted by SparkPeople user KERRNEL.
