12 oz Ground Beef (extra lean)
1 large head Cabbage
2 medium cooking onions
2 cups White Rice, long grain, cooked (or about 2/3 cup uncooked rice)
2 oz Tomato Paste
1 stalk Celery
1 medium Tomato
.5 tbsp Salt
.25 tsp Pepper
1(10 1/2 oz) can Beef Broth, Campbell's Condensed Soup
2 cup Water (about)


How Do I Make Cabbage "Dolma"?

Here is how you make Cabbage "Dolma":

Prepare cabbage for making cabbage rolls by "softening" cabbage in boiling water for a few minutes so that outer leaves can be easily removed. Out of boiling water, remove outer leaves, return remainder of head of cabbage into boiling water. Repeat until about 3/4 of outer leaves have been removed. (Save small inner leaves for another use.)Cut away thicker portion of cabbage leaves.Combine ground beef, 1/2 medium onion (minced), rice, tomato paste,pepper and about 1 tsp salt.Fill individual cabbage leaves with about 1 1/2 tbsp (or less) filling, depending on size of leaf, and form into rolls. (If using uncooked rice, make looser rolls to allow for expansion of rice as it cooks.)Put rolls open side down into Dutch Oven, fitting them tightly together. Quarter remaining onion and celery stalk, and place in Dutch Oven with cabbage rolls. Peel and mince tomato, and add on top of cabbage rolls. Add beef stock and just enough water so it is nearly to top of cabbage rolls. Sprinkle with remaining salt (to taste). Cover and heat until boiling.
