When bacon is crispy, remove slices from drippings and leave drippings in boiler. Set bacon slices aside. Add chopped onion and diced garlic to bacon drippings. Saute until onion is translucent. Turn heat down to low and add chopped cabbage to boiler. Stir to distribute bacon drippings throughout cabbage. Stir occasionally and cook for 15 minutes. Add the can of tomatoes and 1/2 cup water. Add salt and pepper to taste. Cook at medium heat for 20 to 30 minutes, or until the thick pieces of cabbage are tender. When stewed cabbage is ready, turn off heat and crumble cooked bacon on top.
