This recipe uses regular pork sausage, so, if you want to make a healthier version, tasso is somewhat better and most smoked turkey sausages work just as well as pork (but you will need to stir more often at first). 28 oz canned petite diced tomatoes
1 1/2 cup beef broth
1 1/2 cup quick long grain brown rice
1 tsp thyme
1/2 tsp cayenne
1 tsp cumin, preferably ground
1 cup cooked pearl barley (optional)
1 lb medium shrimp, raw (optional)

Here is how you make Cajun-ish Jambalaya:

In large lidded pot:1---Chop up sausage. Brown sausage on medium heat, stirring every few minutes. Meanwhile clean and chop up onion, bell pepper, and celery; add to sausage when it seems mostly browned. Stir veggies in and add a little broth if necessary. Cook for about 3 minutes covered, or until the onion has softened somewhat.2---Add all tomatoes and spices. Stir in thoroughly. 3---Stir in rice and broth. Bring to a boil, and reduce heat. Cover and cook about 15 minutes or until the rice is very close to done.4---Add barley and raw shrimp. Stir into mixture, cover pot, and cook 5 more minutes (do NOT increase heat).5---Remove jambalaya from heat, but leave covered for another ten minutes.
