Here is how you make Couscous Cakes:

Prepare couscous as directed on boxDrain the liquid from the can of chickpeas into a bowl.In a food processor take 1/2 can of chickpeas and puree with garlic, mint, basil, cilantro, salt, pepper, sherry vinegar, lemon zest, and cayenne pepper until it forms a paste. If it is too dry, add small amounts of the liquid from the can of chickpeas.Next pour the remainder of the can of chickpeas into the blender and pulse a few times. Take the mixture from the blender and place in a bowl.Add about 2/3 of the couscous and mix well.In a skillet, heat any type of oil to medium high.While the skillet is getting hot, use a 1/3 cup measuring cup and put the mixture into the cup, then invert the cup to form patties. The patties may be hard to remove but shake hard and they will come out.Then add the patties to the skillet and use a spatula to smash them down a little.
