Cook in a large saucepan of boiling, salted water for about 2 minutes. Drain and pat the carrots dry.Stir orange juice and brown sugar together in a heavy skillet, allowing sugar to dissolve. Boil the contents until reduced to scant .5 cups (this takes about 5 minutes.) Add carrots and butter to the mixture and simmer until the carrots have absorbed most of the orange mixture (another 5 minutes.)Add the honey and lemon juice, mix gently, and season to taste (I used garlic salt, pepper, dill, and cilantro.)
