Two big handfuls of kale (feel all virtuous for eating locally sourced seasonal veg too)
One green pepper, chopped finely
One medium onion also finely chopped, I used red but it doesn't really matter...
One small tin sweetcorn
One tin Campbells condensed mushroom soup
Turkey or chicken, cooked and shredded, or I used Quorn chicken style pieces cos they were left in the freezer.
About a cup of grated low fat strong cheese

Here is how you make The 'I May Be Poor But I Still Eat Well' Casserole:

This is DEAD easy. Cook the pasta. When it is nearly cooked chuck the kale in too. Drain and put in a big ovenproof casserole. Chop the pepper and onion, and add them to the casserole along with the sweetcorn and shredded meat (or Quorn). Add the soup and then one can of water (using the soup can), or you could use chicken or veg stock for extra flavour. Mix well so its all combined and coated with soup.Sprinkle cheese in an arty but not stingy manner all over and then stick it in a hot oven for 20 mins until it is all bubbling and the cheese is starting to brown.Serves 4, if you're hungry, or 6 if you have a big pile of roasted veggies alongside.Mmmm.Number of Servings: 4Recipe submitted by SparkPeople user ATEAPOTANDACAKE.
