1/2 cup finely chopped bell pepper
1 can reduced sodium cream of chicken soup
1 can reduced sodium cream of celery OR cream of mushroom soup
2 cups instant brown rice (uncooked)
1.25 cups skim milk
2 cups frozen peas and diced carrots OR 1 cup frozen peas and 1 cup frozen corn
1 Tbs garlic powder
pepper to taste
1 cup shredded 2% cheddar cheese

Here is how you make Chuck 'n Cluck All in One Casserole:

Preheat oven to 350. Brown ground beef with chopped onion and bell pepper. Drain well. Place in casserole dish with both cans of soup, uncooked rice, milk, vegetables, pepper and garlic powder. Stir well. Bake 20 minutes, remove, stir thoroughly and return to oven (This insures rice will not be crunchy) for another 20 minutes. Remove from oven and top with cheese. Bake another 5 minutes.
