Here is how you make David's Enchilada Casserole:

Pre heat oven to 350 degrees. In small sauce pan over medium heat, heat the canola oil and stir in flour until smooth. Stir in first 6 ingredients thru cinnamon, cook and stir until thickened and bubbly. In a bowl combine next five ingredients thru tomatoes with chilies. Coat a 2 quart rectangle casserole dish with non stick cooking spray. Cut Flax bread into 6" triangles. Spread 1/3 cup of sauce in bottom of casserole, layer 1/3 of flat bread, add 1/3 bean mixture, then add 1/3 sauce, sprinkle with cheese (set aside 1/4 cup of cheese). Repeat layer twice starting with the flat bread. Reserve 1/4 cup of sauce. Bake covered for 35 minutes . Chop cilantro sprinkle on top. Add the 1/4 cup of sauce. Sprinkle remaining cheese on top of sauce. Cut the 6 cherry tomatoes in half lay on top. Bake uncover 5 minutes.
