1/2 can rotel tomatoes
2 tsp. taco seasoning
2 Mission Whole Wheat Tortillas
1/2 pound extra lean ground beef
1 cup Fat Free Cheese

Here is how you make Yummy Mexican casserole:

Cut 1 tortilla into pieces and layer on bottom of small pyrex pan or bowl. Brown ground beef and add taco seasoning (cook as instructed on seasoning packet). Layer the ground beef on top of the tortilla. Next layer 1/2 cup of red kidney beans and 1/2 cup of Rotel tomatoes. Sprinkle cheese, add the second tortilla shell cut into pieces and sprinkle another layer of cheese on top. Cook appoximately 10 minutes on 400 degrees.
