Here is how you make Sweet Potato Enchilada Casserole:

Place chicken pieces, sliced onion, and sliced bell pepper in crock pot on low for 7 hours.Meanwhile, Roast sweet potato at 400 for 1 hour, mash with fork and salt and pepper to taste.Remove chicken and shred with fork.Remove onions and bell peppers with slotted spoon so that liquid remains in pot.Add tomato paste to liquid remaining in crock pot. Add 1 tsp chili powder and salt and pepper to taste and leave on low until ready to use.Spray 2 7x11 ish inch casseroles with pam.place 2 tortillas in bottom of each dish.Divide sweet potato between dishes and spread into a thin layer.Divide onions and bell peppers and spread on top of sweet potato.Sprinkle half can of corn in each dish. Spread out among onions and peppers to create even distribution. Spoon about 1 cup of tomato / broth mixture on each.place 1 tortilla on each.Spread 1/2 shredded chicken in even layer in each dish.Sprinkle 1 cup of cheese on each.divide remaining tomato/ broth mixture between dishes and spread out.top each with 2 tortillas. Divide can of enchilada sauce between each dish and spread on top of tortillas.
