2 tbsp green chiles (go for New Mexico!)
3 flour tortillas (go for Mexican blend cheese (no fat free!)

1. Heat your skillet over medium high heat and brown the beef and the onion. Drain the fat. Add tomato sauce, beans, corn, green chile and mix well. 2. Stir in all the spices except the red pepper. Bring to a boil and then reduce to low and simmer for about 5 minutes. Add red pepper to taste. 3. Spread 1/4 cup of the beef mixture on bottom of a 9x9 baking dish sprayed with cooking spray. Top with 1 1/2 of the tortillas. You may need to cut the tortillas to get them to fit properly. Layer with 1/2 the remaining mixture and 1/2 cup of the cheese. Repeat with remaining tortillas, beef mixture, and cheese.4. Bake in preheated 350 degree oven for 20 minutes. Allow to sit for 5 minutes before serving.
