1. Scoop the seeds out of the acorn squash and discard. Roast the squash and the sweet potato at 400 degrees for about an hour, or until they're soft when you poke them with a fork. Set aside to cool a little bit.2. Cut the kielbasa into half-moons, and saute in cooking spray until they get a little brown. Remove from heat.3. Scoop out the acorn squash and the sweet potato into a big bowl. Season liberally with salt and pepper. Mash up a bit.4. Layer the following into the casserole dish: the squash mixture, dot with butter, sprinkle brown sugar over, kielbasa, and sprinkle with pecans.5.
