Heat the oil in a skillet, brown the meat. Put the meat into a casserole dish or slow cooker. To de-glaze the pan pour in the pineapple chunks, juice, add pepper and salt (dry ingredients)Add half a can of water then bring to a simmer until the pan is clean. Tip all the ingredients into your casserole dish. Slice the leek into 1" slices and chop the bell pepper into 1/4 inch cubes, add to the casserole, mix. Add more water if desired.Cook in slow cooker half to all day, or in the oven at around 175C for 1-2 hours.Watch it doesn't dry out and add water if neccessary.10 mins prior to serving I add the cornflour (corn starch) mixed with about 2 tbsp water to thicken the sauce.
