1 lb. 93% lean ground turkey Turkey,
1 packet Old El Paso Taco Seasoning,
3 medium ripe tomatoes, diced
1/4 cup diced Green Peppers (bell peppers)
1/4 cup diced sweet, red, pepper
1/4 cup diced Yellow Peppers (bell peppers)
1/4 cup chopped Onions
1 cup water
1/2 cup low or fat free Sour Cream
1 cup shredded low fat cheddar cheese
nonstick cooking spray
guacamole for garnish (optional)


How Do I Make Taco Casserole?

Here is how you make Taco Casserole:

Spray skillet with nonstick cooking spray, (I use olive oil spray) brown turkey in skillet until no longer pink, add water, vegetables and seasoning mix and simmer until peppers and onions are tender and liquid is beginning to thicken. Meanwhile, mix sour cream with prepared noodles, coat bottom and sides of 9" x 13" baking dish with nonstick spray. place half of the noodles in baking dish. When turkey and vegetables are ready, place half of the mixture over top of noodles and sprinkle with half of the cheese, repeat with another layer of each, ending with a layer of shredded cheese.
