1/2 c dry white wine
2 c milk

1 t hot sauce
1 t Dijon mustard

Here is how you make Italian Tuna Casserole:

Boil and drain pasta. Heat large skillet on medium, add EVOO then butter. When melted, add onions and garlic until tender. Sprinkle flour and cook for a minute, then whisk in wine, stock and milk and bring to a boil. Reduce heat and season with nutmeg, hot sauce, mustard, salt and pepper. Simmer 2 - 3 minutes to thicken, then add spinach.Add tuna and heat through. Add pasta and transfer to a casserole dish. Sprinkle with cheese and place under broiler to brown.
