3 lbs. boneless, skinless, chicken breasts
8 oz. colby/ jack cheese
1 - 10oz. can cream of chicken soup
2 - 4oz. can of mushrooms
1 can of cream corn (or partially pureed regular
corn)
1 tbsp minced onion
1/2 tsp cilantro
1/4 cup Italian seasoned bread crumbs
1 lb. small pasta shells

Here is how you make Extra Veggie Casserole:

Cook broccoli, cauliflower, carrots according to package. Meanwhile cut chicken into bite-size pieces, and cook in skillet. Also, cook pasta (mini-shells) according to package, drain. When the mixed vegetables and chicken are cooked, drain and set aside. Heat creamed corn, 1 tbsp minced onion, 1/2 tsp cilantro, cream of chicken soup, and shreaded colby/jack cheese until smooth. Add chicken and mixed veggies to the soup mixture. Add mixture to drained pasta. Move to a casserole dish. Top with Italian seasoned breadcrumbs. Bake at 350 degrees for 11-13 minutes. Serve.
