I am always trying to sneak veggies into family faves. This one was a hit. Due to the extra veggies, the can of soup needed a little moisture boost, so I threw in a 1/2 cup of leftover alfredo sauce. If you have sour cream or another cream soup on hand, I'm sure those would work just as well. It's also great using veggie crumbles or ground turkey in place of the ground chicken.

1 lb. Perdue Fresh Ground Chicken
8 oz. Fresh Mushrooms, coarsely chopped
1 tbsp. Olive Oil
1 can Healthy Request Cream of Mushroom soup
1 can Del Monte Cut Green Beans, drained
1 can Del Monte Peas & Carrots, drained
1/2 cup Ragu Classic Alfredo Sauce
Salt, Pepper and other dry seasonings, to taste

Here is how you make Tater Tot Casserole with Veggies:

Preheat oven to 375 F.Heat olive oil in large skillet. Add chopped mushrooms and cook, covered, until about half way done. Add ground meat and any salt, pepper or seasonings; mix and cook together until meat is browned. Drain off any excess oil. Allow to cool for a few minutes, then add in can of mushroom soup and green beans. Mix well. Carefully add the can of peas and carrots and 1/2 cup of alfredo sauce and gently stir until mixed in. Spoon mixture into a 9x12 casserole pan.
