*1 medium onion (chopped)
*3 cloves garlic (chopped)
*1 can stewed tomatoes (drained w/ liquid reserved)
*1/4 pine nuts (they're best toasted)
*1 small box raisins
*1 tsp cumin
*red pepper flakes to taste
*salt to taste
*1 cup cooked bulgur


How Do I Make Turkish Zucchini Casserole?

Here is how you make Turkish Zucchini Casserole:

Saute turkey, onion, and garlic together until onions are soft and turkey is cooked (I always just toast the pine nuts in a separate skillet as I'm doing this).Add drained tomatoes, pine nuts, raisins, cumin, red pepper flakes and simmer together for 5 minutes or so. Stir in bulgur and salt to taste.Slice 6 zucchini lengthwise into 1/2 inch slices.In the bottom of a casserole dish place 1 layer of zucchini and top w/ about a third of the meat/bulgur sauce. Keep repeating--ending w/ zucchini on top. Pour reserved tomato juice over the top.Cover w/ foil and bake in a 350 degree oven until zucchini are soft (about 1.5 hours depending on the depth of your casserole).Makes 8 very filling servings.Number of Servings: 8Recipe submitted by SparkPeople user MARYANDGRIFF.
