1 medium granny Smith apple, diced
2/3 cup barbecue sauce, natural
12 ounces swiss chard, or spinach; washed, stemmed, and chopped
1 cup quick-cooking grits, preferably stone-ground
1 1/2 cups frozen corn kernels, thawed
1 1/2 tablespoons Earth Balance Margarine
1 cup vegan cheese, grated
salt and pepper, to taste

Here is how you make BBQ Black Eyed Peas with Greens and "Cheese" Grits:

For the Peas:1. Heat the oil in a wide skillet. Add the onion and saute over medium-low heat until translucent. 2. Add the garlic and tempeh bacon and saute, stirring frequently, until everything is golden and just beginning to brown lightly. 3. Stir in the black-eyed peas, apple, and barbecue sauce. Cook ever medium-high heat for 10 minutes or until the sauce is reduced. 4. Add the greens and cover until wilted. Stir the greens, then cook for another 2 minutes or so for the spinach, or 4 minutes for the chard, until tender but still bright green. Serve at once. For the Grits:1. Bring 4 cups water to a gentle simmer in a medium saucepan. Slowly whisk in the grits, stirring constantly to avoid lumps. Cook gently over low heat for 5 minutes, or until tender and thick. 2. Stir in the corn, margarine, and cheese. Cook for another minute or two, until the cheese is fairly well melted. 3. Season with salt and serve.
