2 tbsp. chopped onions

Here is how you make Quinoa Beef and Cheese Cups:

Preheat oven to 350 degrees; liberally spray muffin tins with nonstick cooking spray. Cook the quinoa and water; set aside. In a large bowl, combine eggs and egg whites; beat until blended. Add in cooked quinoa, zucchini, cheese blend, beef, half the parmesan cheese, garlic, onions, salt and pepper; mix well. Divide evenly into muffin tin. Bake 10-15 minutes or until almost done, then add the last 2 tbsp. of parmesan cheese on top and bake for another 5 minutes or until cheese is melted and edges have turned slightly golden brown.
