Pre-heat oven to 350°1. Start by making the roux: In a 2 quart saucepan, melt the margarine over medium heat. Whisk in the flour, allow mixture to cook for at least 2 minutes, don't let it get too dark!2. Stir in the salsa verde.3. Add the milk, 1/2 cup at a time, whisking to combine each time. 4. Cook mixture about 10 minutes, until it thickens and ALMOST boils, but don't let it boil!5. Reduce heat to as low as you can6. Add the cup of blended cottage cheese, stir to combine. 7. Stir in the muenster and colby8. Stir in the 2/3 cup shredded cheddar9. Place the chopped broccoli and cauliflower in a 9x13 casserole dish.10. Pour the cheese mixture over the broc-o-flower and toss around to coat.11. Sprinkle the remaining 1/4 c. cheddar on top. 12.
