1 (8 ounce) package elbow macaroni (wheat if available)
5 tablespoons light butter
5 tablespoons all-purpose flour
1 quart warm nonfat milk (110 degrees F/45 degrees C)
salt and pepper to taste
1 pinch cayenne pepper
1/8 teaspoon onion powder
1 pinch garlic powder
5 ounces light Cheddar cheese (cubed or shredded)
5 ounces nonfat american cheese (slices)
5 ounces light cheese (cubed or shredded)
or you can substitute 15 ounces of your favorite combo of cheese (cubed or shredded) I used some parmesan, colby, and provolone as well as the above
paprika to taste

Here is how you make Sharon's Perfect Mac and Cheese:

Directions:1. Preheat oven to 350 degrees F (175 degrees C). 2. Grease a 9 x 13 baking dish. 3. Bring a large pot of salted water to a boil. 4. Add pasta and cook for 8 to 10 minutes or until al dente; drain. 5. In medium saucepan, melt butter and stir in flour to make a roux. 6. Cook 1 to 2 minutes, stirring constantly, then whisk in warm milk a little at a time to make a white sauce. 7. Bring to a boil, then reduce heat and simmer.8. Mix in salt, pepper, garlic, onion, and cayenne, and stir frequently until sauce thickens. 9. Remove pan from heat and stir in cheese. 10. Combine pasta with sauce and stir well. 11. Pour into baking dish. 12. Use paprika and/or additional parmesan cheese to make a decorative pattern on top. 13. Bake 45 to 60 minutes, or until top is the desired crispiness. 14. Let rest 20 minutes before serving. Also great if you cook seasoned ground beef or turkey with onion and add with the noodles. Also, if I just want to make one dish, I'll add frozen greeen beans - tricks the kids into eating them and makes your portion look even bigger!This is set to serve 6.
