Preheat oven to 350 F. Cook zucchini slices in boiling water 3 to 4 minutes; drain. Brown onion, add crumbles, and stir in soup, rice, oregano, salt, and garlic powder. In 12"x7.5"x2" baking pan, layer half of zucchini slices, soup mixture, cottage cheese, and remaining zucchini slices. (If desired, you can cover casserole with foil and refrigerate up to 24 hours at this point.) Uncover and bake 1 hour and 15 minutes at 350 F.
