1 head, large (6-7" dia) Cauliflower, raw
16 oz Tyson boneless, skinless chicken breast
3 medium Egg, fresh, whole, raw
1 cup, fluid (yields 2 cups whip Heavy Whipping Cream
1 cup Half and Half Cream
2 cup Kraft Finely Shredded Sharp Cheddar Cheese
3 tbsp Hatch Diced Green Chile (by NOMFAUX)
1 cup, pieces or slices Mushrooms, fresh
2 tbsp Butter, salted
.3 cup, chopped Broccoli, cooked
.12 cup Potato Sticks


How Do I Make Cauliflower and Cheese?

Here is how you make Cauliflower and Cheese:

Break cauliflower into florets.Dice chicken.Chop mushrooms.Steam cauliflower. While the cauliflower is cooking, melt 1 tbs of butter in a pan and brown the diced chicken. When browned, remove from pan, set side and add chopped mushrooms to pan & drippings. Cook until soft. When done, add to the chicken. Set aside.Take remaining butter and grease a large casserole pan.Drain steamed cauliflower and using a pastry knife, chop until a fine to medium consistency. Mix together with the chicken & mushrooms and also 1.5 cups of the shredded cheese and the green chile.Beat eggs into the cream combined with the half & half. Put cauliflower mixture (cauliflower, mushrooms, green chile, chicken) into the greased casserole. Top with a bit of cooked broccoli and remaining cheese. Pour egg mixture evenly over the casserole. Top with 3 tablespoons of crushed potato sticks for crunch.Bake at 400 for 30 minutes.
