1 pkg of pasta of choice ( I use Trader Joes's Brown Rice Pasta) ( reserve 1 C. cooking liquid)

1T. nutritional yeast, optional

salt to taste ( usually around 1/2 - 1 tsp.)

1 tsp- 1T. yellow mustard

2 T. soy-free earth balance spread ( at some Walmarts, Sunflower market, Sprouts, and Whole Foods)

1 Can of white beans, drained and rinsed and pureed

1 head of cauliflower, steamed and pureed (2 C.)

Here is how you make dairy free GF Mac n Cheese that's better for you:

Prepare pasta and reserve 1 C. Cooking water before you drain pasta ( do not rinse). Add pasta back into pan, add dairy free spread and just enough cooking water to make the amount of sauce you want. Simmer till the butter substitute is melted and warm enough to melt the cheese substitute. Stir in the cheese till melted then add in nutritional east and mustard and stir well , then add in salt to taste. Then add in cauliflower pureed and bean puree, mix well. Enjoy! For a thinner sauce make sure the cauliflower puree is more than the bean puree.This same cheese sauce could also be used to make nacho cheese sauce just add in a little cumin & chili powder to make it mexican flavored. If you don't have the pasta water to cook it use rice milk or other non dairy milk substitute of choice.Serving Size:?8-1 C. servings
