Preheat oven to 180C.Chop the onions as finely as you can (I suck at this, but it still turns out okay!) and chuck into a good sized mixing bowl. Add in the rest of the ingredients and mix well.Pour it all into a baking dish - mine is about 30x20cm (the mix should be about 1 1/2 - 2 inches deep) - and stick in the oven for an hour. Options: You can top it with sliced tomatoes if you like - it adds a lovely tang. I like to chuck a few chicken breasts into another dish, cover with a tin of chopped tomatoes and some more mixed herbs, and cover that with foil and stick it in with the loaf, so it's all ready at the same time.
