Add carrots and cauliflower. Drizzle with olive oil, toss, and sprinkle with coarse salt. Roast in preheated oven 25 to 35 minutes until fork-tender.Scoop squash out of skin, and place in blender along with roasted carrots and cauliflower. Add milk, and puree until very smooth.Melt butter in a large saucepan over medium heat. Whisk mustard and cayenne into melted butter, and cook 1 minute, stirring. Pour in vegetable puree and add ? teaspoon salt. Cook until bubbly, stirring frequently. Stir in cheese until melted. The sauce should be pourable. If it is too thick, add additional milk or some reserved pasta water.At this point, you could enjoy the sauce as a nice soup, or you can mix with warm macaroni. Taste and add additional salt if necessary, and several grinds of fresh black pepper.After mixing all ingredients together we let this sit overnight and baked at 450 for 30 minutes.
