6 ciabatta rolls

Caramelise onions - put oil, onion and rosemary kinto a large saucepan over a medium low heat and cook for 30 minutes until golden. Add balsamic vinegar and brown sugar and cook another 5 minutes. Season with salt & pepper then remove from heat and keep warm.Peel mushrooms. Spray with olive oil and sprinkle with garlic before placing on hot grill. Cook 10 minutes until soft and cooked through.Sprinkle a little blue cheese over mushrooms.
