Here is how you make Clean Mac 'n' Cheese:

Cook macaroni.Preheat oven to 375 degrees.. Lightly spray a 8" casserole dish with non-stick spray.Spoon flour into a bowl and whisk in enough milk to form a paste. Then add remaining milk, whisking as you do, making sure no lumps remain.Place in a non-stick pan, over medium heat. When milk is warm add cheeses slowly bit by bit, stirring constantly. The mixture should thicken.Stir in macaroni and transfer to the casserole dish. Top with breadcrumbs and parmesan.Bake 15-20 minutes, or until topping is lightly browned.
