1 box fettuccini, whole grain recommended
2T olive oil
3 cloves garlic minced
1t crushed red pepper flakes
1 14oz. jar roasted red peppers, drained and chopped
1 14oz. can fat free evaporated milk
4oz. goat cheese
4oz. low fat cream cheese
1/2c freshly grated parmesan cheese
1/2c chopped basil

Here is how you make Roasted Red Pepper and Goat Cheese Alfredo:

Cook the pasta according to package directions. Grill the chicken. While the pasta and chicken cook, make the sauce. For the sauce: heat the olive oil over medium heat add the garlic and crushed red pepper flakes and cook until the garlic is tender. Add the roasted red peppers, milk and cheeses stirring occasionally. When the cheeses are melted use a hand blender, blender or food processor and blend the sauce until smooth.
