1/2 cup olive oil, divided
1 large onion, diced
2 cloves garlic, minced
1 26 ounce can of diced tomatoes, or equivalent of peeled fresh
1 6 ounce can tomato paste
fresh or dried basil, oregano, thyme, bay leaf
salt and pepper
6 ounces mozzarella cheese
4 ounces shaved or shredded parmesan cheese

First make the tomato sauce. Saute the chopped onion in 1/4 cup olive oil, add the minced garlic for just a minute to soften but not brown, add tin of tomatoes and tomato paste. Add herbs as desired. Simmer for 30 minutes. Remove the bay leaf before making the casserole.Meanwhile, bake the eggplant.Brush the eggplant slices lightly with 1/4 cup olive oil, put on a silicone baking sheet or on a parchment lined baking sheet, and bake for 20 minutes at 450/500 F, turning after 10 minutes.In a a flat casserole dish, make 2 layers of eggplant, with tomato sauce and both cheeses scattered in between and on top. Bake at 375 F for 30 minutes.
