So this is a recipe I figured out so that I could have Mac N'Cheese without unnecessary fat. It's a great alternative to homemade Mac N'Cheese. I found making the sauce this way easier and more foolproof than on the stovetop. It was easier to prevent lumps in the sauce and it was much faster! Because I am usually cooking for one I am often making up recipes just for one person. So this is a meal just for one person, but if it's for a family it's just a matter of increasing the portions as needed.

****Pasta****

*1/2 cup (dry measure) Macaroni

*1 1/2 cup Mixed Frozen Vegetables

****Sauce Ingredients****

* 3/4 Cup NonFat Milk

* 1 TBSP White All Purpose Flour

* 24g Partly Skim Mozzarella (one serving of mozzarella). Note -- if you leave the cheese out you have the basis for a White Sauce, but I've included this cheese in the nutrition calculation -- substitute your favourite cheese and adapt the nutrition calculation appropriately.

****Seasonings (optional -- not included in nutritional information -- but what I like to put in)****

*dash of salt & pepper (or Mrs Dash if I have it around).

*Cayenne Pepper

*Dried Pepper Flakes

*Garlic


How Do I Make Healthy Mac N'Cheese?

Here is how you make Healthy Mac N'Cheese:

To Make the Pasta:1. Boil Water for pasta.2. Cook pasta according to instructions and your preferences3. For simplicity, I toss in mixed frozen veggies 1-2 min before the pasta is finished -- reduces the dishes -- and I find that once the water returns to boiling the veggies are as cooked as I like them and the pasta is done. If you prefer to cook the veggies separately, go for it.4. While the pasta is cooking make the sauce.To make the Sauce:1. Mix NonFat Milk with Flour in a tupperware or other seal-able microwave safe container.2. Add your preferred seasonings.3. Close container and shake vigorously until the flour and seasonings are evenly mixed with the milk.4. Remove lid (I like to leave it just resting partly on the container) and heat it in the microwave at 100% power for 2-4 min (cook time varies with different microwave ovens).5. Don't leave the sauce, stir it every 30 seconds to make sure it's heating evenly.6. Once it's thickened, add the cheese7. Heat again for 20-30 sec, just long enough to melt the cheese and stir it in.
